Your house will smell so good while this is cooking. Pork tenderloin with an amazing light gravy that you can put over rice. Serve with a green veggie on the side.
3 lbs. pork tenderloin
1/2 c. dried cranberries
2 med. Granny Smith apple
4 c. chicken broth
3 tsp. garlic
1 med. red onion
1 tsp. sea salt
1 tsp. black pepper
2 tbsp. dijon mustard
3 tbsp. fresh rosemary
Place dried cranberries, peeled and chunked Granny Smith apples, chicken broth, crushed garlic, chopped red onion, sea salt, pepper, Dijon mustard, and chopped fresh rosemary in a crockpot or slow cooker. Stir all ingredients together and then add in pork tenderloin slices making sure they are covered by the liquid. Turn crockpot to high and let it simmer away for 5 to 6 hours. I think you could probably let it go longer if you put an extra cup of water in the pot. Serve over rice.
