Great recipe for a sweet treat!
1/2 c. coconut oil
1/3 c. coconut sugar
1/3 c. almond milk
1/4 tsp. vanilla extract
2 c. spelt flour
1/2 c. old-fashioned oats
1 tsp. baking soda
1/4 tsp. sea salt
2/3 c. slivered almonds
1/2 c. dried cranberries
1 tsp. cinnamon
Preheat oven to 400ºF. Line a baking sheet with parchment paper.
Stir together coconut oil, coconut sugar, almond milk, and vanilla extract in large bowl.
Combine spelt flour, oats, baking soda, and sea salt in another bowl. Gradually add dry ingredients into wet until well incorporated. Add more milk if mixture is too dry. Knead in cranberries and slivered almonds.
Roll tablespoon amounts of dough into balls (should make 30), and flatten on baking sheet. (Tip: dip your fingers in water when pressing the cookies flat so the dough doesn't stick to them.)
Bake for 3-5 minutes, let cool on tray for a minute, and then transfer to wire rack to cool completely.
