This is the perfect side to any meal - sweet, tangy, nutty, and totally healthy!
4 c. mixed greens
2 med. red apple
2 oz. walnuts
1/4 c. celery
1/2 c. cranberries
2 tbsp. red onion
1/4 c. apple cider vinegar
1 tsp. dijon mustard
1 dsh. stevia
1 c. extra virgin olive oil
Combine mixed greens, apples (sliced into 1-inch pieces), walnut pieces, and chopped celery in a bowl. Toss to mix well.
Prepare the vinaigrette: combine fresh cranberries, finely chopped red onion, apple cider vinegar, Dijon mustard, and stevia in a food processor. Blend until onion is no longer chunky. Slowly add in the olive oil until well combined.
Pour 1/2 cup of the vinaigrette over the salad and toss salad to coat leaves.
Notes: I toasted the walnuts over the skillet on medium heat for a few minutes and it added great flavor (though I like it both ways). The vinaigrette makes more like 1 1/2 cups of dressing... I like leftovers. :) If you don't want leftovers, cut the vinaigrette recipe in half and increase mixed greens to 6 cups and walnuts to 3 ounces.
