Crab Stuffed Baked Avocado

An elegant, rich and satisfying main dish!

Ingredients

    1 avocado

    1/2 sml. onion

    1 tbsp. spelt flour

    1 c. milk, raw or organic

    1 clove garlic

    sea salt & black pepper to taste

    8 oz. crabmeat, lump, sustainably raised

    2 tbsp. coconut oil

Directions

Preheat oven to 400 degrees F.

Half avocado and remove pit, leave skin on.Sprinkle each half with lime or lemon juice and set aside.

Sauté onion in coconut oil, but do not allow to brown at all.

Make roux by adding the flour and cook for 2 minutes.

Add milk, a small amount at a time, guarding against lumping. stirring vigorously

Cook and stir until smooth and thick.

Add minced garlic and continue to stir 1 minute (add last to prevent it from turning bitter).

Remove from heat.

Combine remaining ingredients except parmesan cheese and add to white sauce.

Fill avocado cavities with mixture.

Sprinkle each half with 1 TBSP parmesan cheese.

Bake for 15 minutes or until avocado is heated through.
