Easy gluten-free pancake recipe - it's made with healthy ingredients and really tastes like pancakes!
1/2 c. cottage cheese
2 egg
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. vanilla extract
1/4 tsp. stevia
1 tbsp. coconut oil
1/2 c. oats, whole, dry, organic
Mix all ingredients except oil in a blender. Heat pan with coconut oil at low medium heat. Pour batter into pan and add any fruits like blueberries or apple pieces to it. Cook each side for 3-5 minutes.
Top with organic maple syrup or apple sauce and fruits.
