Corn Casserole

10 Servings! I don't have corn too much these days, but I WILL be making this casserole for Easter. You'll love this! :)


    4 1/2 c. frozen corn

    1/2 c. onion

    1 1/2 c. milk, raw or organic

    4 egg

    3 tbsp. spelt flour

    1/4 tsp. white pepper

    1/4 tsp. nutmeg

    1/2 tsp. sea salt


Place 1 1/2 cups of the corn and ALL of the remaining ingredients into a blender or food processor. Process for 1 minute, or until the mixture is smooth. Place the processed mixture in a large bowl, add the remaining corn kernels, and stir to mix well.

Grease a 2 1/2 quart casserole dish, and pour the corn mixture into the dish. Bake at 350 degrees F for 1 hour and 15 minutes, or until a sharp knife inserted midway between the center of the dish and the rim comes out clean. Once that happens, remove the dish from the oven, and let sit for 10 minutes before serving.

This is really good and my family loves it. Sometimes I'll add a bit of butter to the mixture. Often I'll top it with a bit of cheddar cheese right before I take it out of the oven. Lots of ways to garnish this if you want it lookin' fancy. :)
