Coriander-Crusted Pork Chops with Sauteed Apples & Caramelized Onions

I thought I'd seen this on the Recipe link, but now I can't find it. This countryliving.com recipe is adjusted to fit DSP.

Ingredients

    4 pork chop

    2 med. yellow onion

    1 tsp. sea salt

    1 tsp. black pepper

    2 red apple

    2 tbsp. coriander seed

    2 tsp. ground cumin

    2 tbsp. dijon mustard

    2 tbsp. honey, raw

    2 tbsp. butter

    2 tbsp. coconut oil

Directions

CARAMELIZE THE ONIONS: Slice onions in rings. Melt 1 tablespoon of butter and 1 tablespoon of coconut oil in a large skillet over medium-low heat. Add the onions and cook, stirring occasionally, until they are soft and translucent and continue cooking until onions are browned. Stir in 1/2 teaspoon of salt and 1/4 teaspoon pepper and set aside. COOK THE PORK CHOPS: [4 (4-6 oz.) boneless pork chops] Preheat oven to 400 F. Combine the coriander, cumin, mustard, honey, and remaining salt and pepper in a small bowl. Heat 1 tablespoon coconut oil in a large oven proof skillet over medium-high heat. Spread the spice mixture over the pork chops and place them in the hot pan sear pork chops for 2 minutes on each side and transfer entire skillet to the oven. Continue to cook in the oven 5-7 more minutes, until cooked thoroughly. WHILE PORK CHOPS BAKE, SAUTE THE APPLE: Cut apples in wedges. Melt 1 tablespoon butter in same skillet as you cooked the onions over medium-high heat. Add the apples and cook until lightly browned on one side. Turn the wedges over and continue to cook until browned. By the time the apples are done, the pork chops should be done in the oven. Place the pork chops on a plate, garnish with 1/4 of the onions and the apples. The sweet of the apples and onions is an excellent complement to the spice of the pork.
