Ingredients

    2 c. water

    1 c. rice, any kind

Directions

Bring water to a boil in a saucepan.

When the water has come to a boil, stir in the rice. Bring the mixture back to a simmer.

Cover the pan and turn the heat down to low. (Don't remove the lid while the rice is cooking - you want to keep the steam in.)

Start checking the rice around 18 minutes for white rice and 30 minutes for brown rice. You'll know the rice is done when it's firm but tender, and no longer crunchy.

Turn off the heat and let stand a few minutes, covered. Remove the lid and fluff the rice with a spoon or fork.

Keep any leftover rice in an airtight container in the refrigerator (it should last several days).
