I lived off of this when I lived in Santa Marta, Colombia. It is simple and delicious and can be added to anything.
1 bell pepper, any color
1 clove garlic
1 key limes
1 sml. red onion
2 roma tomatoes
Dice red onion, tomatoes, and bell pepper. Peel, smash and chop the garlic clove. Mix it all together. Cut key-lime in half, pop out the seeds with a fork, put the fork into each half of the lime, twist and squeeze over the mixture. Toss mixture to spread lime juice. Use key-limes, because the flavor is better and they actually put out a large amount of juice for such a little fellow.
Can be frozen in meal-sized portions, but if you freeze them, do not put the lime in the bag. Squeeze fresh lime over the mixture when you thaw it.
You can add things to this and make a full meal, such as: black beans and corn, diced ham or chicken. You can add it to rice or pasta as a side dish. You can add it to carne asada. You can add it to chopped kale or spinach to complete a salad.
