Cooked Collard Greens with Bacon and onion. Super healthy super good for you!
1 onion
3 pce. uncured bacon
1 tbsp. apple cider vinegar
1 tbsp. extra virgin olive oil
1 lrg. collard greens
In a deep pot, put in oil and onions, saute' until soft and translucent. Add diced bacon. let cook together with onions until cooked through. It will be sift and pinkish not crunchy. If it seems like it will burn, add a splash of water. While cooking, remove tough stems from the greens, then chop into squares. Add in diced collard greens to the onions and bacon, use a large spoon and stir together. Add vinegar and another splash of water. Cover and cook down for about 15 minutes, until softened, serve.
