Coleslaw that tastes fresh and crunchy if you don't like mayonnaise.
2 med. carrot
1/4 cabbage
1 crushed pineapple, canned
lemon juice to taste
Balance the quantity of carrob/cabbage/pineapple and lemon juice to look at and taste. You don't need to cut much cabbage for it to go quite a way.
Thinly slice cabbage, grate carrot, a small tin of crushed pineapple and lemon juice to take the real sweetness out of the pineapple juice. Mix to combine, put in fridge to allow pineapple and lemon juice to work through the cabbage and carrot.
