Coffee Cake Muffins with Raisins and Walnuts

These super tasty muffins make a great breakfast or snack! Use any type of fruit to nut to vary the recipe to your liking!


    1/2 tsp. sea salt

    1 tsp. baking powder

    2 tsp. cinnamon

    1 tsp. nutmeg

    2 egg

    1/4 c. applesauce

    1/4 c. Greek yogurt

    1 tsp. vanilla extract

    1/4 c. honey, raw

    1 tsp. stevia

    3/4 c. homemade coconut milk

    1/3 c. raisins

    1/3 c. walnuts

    1 c. spelt flour

    1 1/3 c. brown rice flour

    1/4 c. ground flax seeds


Preheat oven to 375ºF. Grease a muffin pan.

Combine flours, flax seed meal, sea salt, baking powder, cinnamon, and nutmeg in a large bowl.

Add eggs, applesauce, Greek yogurt, vanilla, honey, stevia, and coconut milk. Stir gently. Do not overmix.

Stir the raisins and chopped walnuts into the batter.

Fill greased muffin cups. Sprinkle tops of muffins with additional flax seed meal (optional) and bake for 20 minutes.
