A little sweet and a little tart - these bars could work for dessert, breakfast, or a snack.
1 c. shredded coconut
1/2 c. almond flour
1 pinch sea salt
2 tbsp. honey, raw
2 tbsp. coconut oil
10 strawberries
1 egg white
3 egg
2 egg yolk
1 tbsp. honey, raw
2 tbsp. lemon zest
1/2 c. lemon juice
1/3 c. almond flour
PREPARE THE CRUST: Preheat oven to 400ºF. Line a loaf pan with parchment paper. Melt coconut oil in a saucepan over medium-high heat. Add 2 tablespoons honey, shredded coconut, almond flour, and sea salt to the pan. Mix until fully combined, remove from heat, and let cool. When the mixture has cooled to room temperature, add chopped strawberries. Add 1 egg white, and stir. Spread the mixture out in the bottom of the loaf pan. Bake for 20 minutes. Remove from oven, and let cool.
PREPARE THE FILLING: Reduce oven heat to 375ºF. Beat together 3 eggs and 2 egg yolks until frothy. Add 1 tablespoon honey, lemon zest, lemon juice, and almond flour; beat for another 2-3 minutes. Pour filling over the cooled crust. Bake for another 20 minutes until the filling is set.
Let cool completely before cutting into 10 bars.
