I learned this easy recipe as a college student while working in a Thai restaurant. Delicious.
2 1/2 c. basmati rice
5 fl oz. canned coconut milk
7 fl oz. water
1/4 tsp. sea salt
Place rice in a pot and add water and coconut milk. Add salt. Cook on medium heat and stir on occasion to be sure the rice isn't sticking to the pot. It may be necessary to add additional small quantities of water as the rice softens. This is to prevent burning at the base. Rice will be cooked once rice is soft and swollen. Add more salt if required.
