Healthy, yummy cookie to help get you over your sweet cravings.
3/4 c. pecans
3 med. banana
1/4 c. coconut oil
1 tbsp. honey, raw
1 tsp. vanilla extract
1 1/2 c. old-fashioned oats
1 c. coconut flakes
1 tbsp. ground flax seeds
1/2 tsp. sea salt
Preheat oven to 350ºF. Combine oats, coconut flakes, flaxmeal, sea salt, and coarsely chopped pecans. Stir in mashed bananas, warmed coconut oil, honey, and vanilla until well combined.
Using a rounded tablespoon as a measuring guide, scoop a tablespoon of dough and drop it onto a cookie sheet. Flatten cookie out a little with clean fingers or a spatula.
Bake for 25 minutes or until cookies are fragrant and golden. Cool on pan.
