Found this recipe on the Tropical Traditions website. It reminds me of the rice made at Chipotle. This makes a huge amount, but it can be cut in half. Note: All ingredients should be organic if available.
4 tbsp. coconut oil
1 1/2 c. onion
3 clove garlic
3 c. brown rice
6 c. water
1 1/2 tbsp. lime
1 1/2 tsp. sea salt
1 tsp. black pepper
1/2 tsp. paprika
Melt coconut oil in a Dutch oven or regular saucepan and add in onions and garlic; cook until onions are tender. Pour in the rice, water, lime peel and spices. Cook until the rice is tender, about 45 minutes. Serve topped with additional grated lime peel and ground black pepper on top.
Variations: For a more coconut-y flavor, you can add some coconut cream concentrate to the rice with you add the water. For a spicy coconut rice, add in some chili powder when adding the spices. You can also use lemon zest instead of lime zest in this recipe.
