Coconut Ice Cream

This is a family favorite, and is BD friendly. I actually like this better than regular ice cream because it has a cooling, soothing effect that other ice cream does not have.


    2 young coconut

    2 shredded coconut

    1/4 c. coconut syrup or nectar

    1/4 c. coconut oil


Take both young coconuts and break them open, straining the coconut water into a blender. Take the meat of the 2 mature coconuts and shred them, and then put it in the blender with the coconut water and blend it until the coconut meat pieces are as fine as the blender will blend them. Take a cloth and separate the liquid from the fiber into a large bowl; the liquid should be white and creamy. Mix in the rest of the ingredients in the liquid and let it sit in the fridge for 3 or 4 hours, and after that, it should be ready to be put into the ice cream maker. Follow the directions that came with your ice cream maker, and enjoy!
