Cute and tasty gluten-free cupcakes!
3/4 c. coconut flour
1 1/2 tsp. baking powder
1/8 tsp. sea salt
1/3 c. coconut sugar
6 tbsp. coconut oil
3 egg
1 tsp. vanilla extract
3/4 c. canned coconut milk
1/4 c. seltzer water
Preheat oven to 350ºF. Line a muffin pan with 12 cupcake liners. Combine all ingredients in a bowl; mix well. Evenly portion out batter among the muffin cups. Bake for 20-25 minutes. Let cupcakes cool completely before frosting them. Enjoy!
