These crackers are the best! Great by themselves, with soup or nachos! Thanks Tifffany in Junction City, OR
1/2 c. coconut flour
1 egg
2 tbsp. butter
1 pinch sea salt
1 1/2 c. mild cheddar cheese
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Blend all ingredients together well.
Spread mixture on parchment paper, add another piece of parchment paper on top of mixture. Use a rolling pin to spread batter to desired thickness. Gently pull off top piece of parchment paper.
Bake crackers for 10 minutes. Take out of oven and score with pizza cutter or knife. Return to oven and continue to bake until they are lightly brown and crisp, about -10 minutes.
