Coconut Everything Muffins

Coconut muffins made with everything coconut! Super quick and easy to make and bake.

Ingredients

    3 egg

    2 tbsp. canned coconut milk

    2 tbsp. coconut oil

    3 tbsp. coconut sugar

    1/4 tsp. sea salt

    1/4 tsp. vanilla extract

    1/4 c. coconut flour

    1/4 tsp. baking soda

    1 tsp. cinnamon

    1 tsp. coconut extract

Directions

Preheat oven to 400ºF.

Mix eggs, coconut milk, coconut oil, coconut sugar, sea salt, vanilla extract and coconut extract. Mix really well to get the coconut sugar blended up. *Also, I added the warmed coconut oil last so the other wet ingredients would have come more to room temperature so that my coconut oil would stay liquid.

Then mix the coconut flour and baking powder together and add to the wet ingredients. I stirred really well to get the little lumps out but then I just used my electric hand mixer to do a fast and better job of that. Just took seconds.

I lightly greased my muffin tins, but I'm not sure if I needed to or not. I always do though. Divide up the batter between the 6 muffin cups as evenly as possible. Give it one nice Thump on the table to help with air bubbles and then put it in the oven at 400ºF for 15 minutes. Watch them after about 13 minutes so that they don't get overdone. Everyone's oven is different!

This time I made them just plain coconut muffins. But next time I might add a bit of mashed bananas or some blueberries or nuts or shredded coconut etc etc to the batter.

Update-I made some Lemony Coconut Frosting (in Recipe section). I put a Tablespoon on these muffins and we all loved it! One Tablespoon is so little I don't even think it counts. But always use in moderation. :)
