This recipe has become my new go to for fiber. The coconut cream has 5 grams per Tbsp. Also has 2 grams of protein which is a bonus for us protein types as it does not count! :) My Husband said it is an energy bar and tasty! Thanks Rebeca in Eugene OR
7 oz. coconut cream
1 1/2 c. mixed nuts
1 tbsp. coconut oil
1/4 tsp. sea salt
1/2 c. shredded coconut
1 tbsp. stevia
Place bag of coconut cream into bowl of hot water to melt. Meanwhile I like to chop pecans and almonds, (not necessary to chop them) Gather the other ingredients. When coconut cream is melted, mix with Salt, Coconut oil and Sweetener (use what you have on hand, if you like a sweetener, it is not needed) in Medium bowl until creamy.
Add nuts and coconut as desired. The more the merrier!
Have parchment paper on baking sheet to drop cookies with Tbsp. Top with coconut shreds. Put in fridge to cool. Enjoy! Keep refrigerated.
If you would like variation, add 1-2 T lemon juice with some lemon zest for lemon nut crunchies.
