Coconut Chocolate Truffles

I initially just started experimenting with some ingredients and found an end product I really liked. These look strange, I know. But fear not, they are healthy fat and protein packed little coconut truffle bites. You wouldn't even know they're low glycemic! I seriously couldn't get enough.

Ingredients

    1 tsp. coconut oil

    1/3 c. sprouted whole grain cereal

    3 tbsp. almond butter

    1/2 scp. Spring of Life Plant-Based Protein Powder, chocolate

    1 1/2 tsp. honey, raw

    1/3 med. banana

    4 tbsp. shredded coconut

    1/2 oz. chocolate

Directions

First, put the dark chocolate and coconut oil in a medium sized bowl and melt in the microwave for 30-40 seconds or until chocolate is soft. Stir the chocolate and coconut oil with a fork. Add the honey and banana and mash together. Next, add almost all the protein powder (reserve a small amount for dusting later) and mix well. Next, stir in the almond butter (depending on the consistency of your almond butter you might need more ezekiel granola. I like my almond butter chunky so these measurements work well) After the almond butter, stir in the granola and ONLY 3 tbsp of the coconut and combine well. (should be hard to stir) If you like, you can add some stevia at this point but I find the honey & banana adds enough sweetness. (not to mention the raisins in the granola) Once all ingredients are well combined, roll the mixture into a large ball (yes it will be very sticky) and put onto a plate and dust it with the remaining protein powder and shredded coconut and form into a square. Cut the square into 6 even pieces and roll each piece into a ball. Each ball is roughly 100 calories. Cover with plastic wrap and refrigerate! ENJOY! (I sure did:)
