Coconut chicken, the twist is in the sofrito. :)
2 coconut oil
1 chicken breast, skin-on
sea salt to taste
First slowly melt Coconut oil in skillet pan. (Low heat) Add 2 tablespoon of Sofrito to coconut oil. Place 2 to 3 thin pre sliced chicken breast. (Raise temp medium heat) Flip chicken breast's over every 5 mins. Do this for 15 mins or until ready. I don't normally add salt, just garlic to taste. The salt is there for the salt lovers that carry it in their purse. :)
(In the pic I added cottage cheese and jalapeno peppers... that's just my favorite thing to do since I tried one of the recipes on BD that called for it.)
