Delicious and easy to prepare dinner that makes for great leftovers. Hubby & kid tested and loved! :)
2 lbs. beef roast
2 lrg. onion
1 1/2 c. canned coconut milk
2 clove garlic
2 tbsp. fresh ginger
2 tsp. curry powder
1 tsp. coriander seed
2 tbsp. coconut sugar
1 tbsp. chili powder
sea salt & black pepper to taste
In a large skillet on high heat, brown the beef quickly on all sides. (Not to cook, just to brown it.)
Put the beef in the crockpot with quartered onions and minced garlic. Combine coconut milk with spices and pour over the beef.
Cook on low for 6-8 hours or on high 3-5 hours, depending on how much time you have.
Servings: 8 (approximately 4 ounces of meat)
Spice this up as you'd like. Add more or use less of things I've listed... or add something I've not included at all! Serve with potatoes and green beans... yum!
