Another delicious way to get Omega-3
2 c. canned coconut milk
4 tbsp. chia seeds
1 banana
1 tsp. vanilla extract
1 tbsp. honey, raw
1 dsh. cinnamon
1/2 c. shredded coconut
Bring Milk and chia seeds to a simmer in saucepan over medium heat. Whisk until it starts to thicken. Add rest of ingredients and continue to whisk until thick as pudding. Separate into 4 serving bowls if desire. Cool in refrigerator until thickened and cool about 1 hour.
