Cocoa-Almond Baked Breakfast Quinoa

Great nutrient-packed breakfast cake with hemp, hemp milk and EFAs. This recipe was on the Whole Foods Website. I added vanilla and cinnamon for extra flavour. Really delicious!!


  • 1 c. white quinoa
  • 1 1/2 c. almond milk
  • 1 c. date
  • 1/2 c. hemp seeds
  • 1/2 c. applesauce
  • 1/3 c. cacao powder
  • 1/4 tsp. sea salt
  • 3/4 c. almond meal
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract


Rinse Quinoa in a fine sieve until water runs clear; drain and transfer to a medium pot. Add 2 Cups of water and bring to a boil, covered. When boiling, reduce heat to medium-low and simmer until water is absorbed, 15-20 minutes. Set aside, off heat, for 5 minutes; uncover & fluff with a fork.

Preheat oven to 350F. Line the bottom of an 8-inch square baking pan with parchment paper; set aside. In a blender, puree hempmilk, dates, hempseeds, applesauce, cocoa, salt, cinnamon and vanilla until well-blended. Transfer to a large bowl; stir in quinoa and 1/2 Cup of the almond meal. Stir to combine well and transfer to prepared pan. Scatter remaining 1/4 Cup almond meal over top and bake until firmly set, about 1 hour.
