Coach Chrissy's Pumpkin Chili

I promise you'll love it! Pumpkin gives chili a great depth, flavor, and consistency. Top it off with a dollop of Greek yogurt and cilantro!


    2 tbsp. extra virgin olive oil

    1 yellow onion

    1 med. green bell pepper

    1 jalapeno pepper

    2 clove garlic

    1 lbs. ground beef

    1 can diced tomatoes, canned

    1 can pumpkin puree, canned

    1 c. water

    1 tbsp. chili powder

    1 tsp. ground cumin

    sea salt & black pepper to taste

    1 can canned kidney beans


Heat oil in a large pot over medium high heat. Add chopped onion, diced and seeded bell pepper, diced and seeded jalapeno, and minced garlic, stirring frequently, until tender, about 5 minutes.

Add ground beef and cook until browned.

Add tomatoes, pumpkin, water (or beef broth), chili powder, cumin, salt and pepper and bring to a boil. Reduce heat to medium low and add beans.

Cover and simmer, stirring occasionally, for 30 minutes more. Ladle chili into bowls and serve.
