Cinnamon Apple Walnut Quinoa

Delicious, warm breakfast!


    1/4 c. white quinoa

    1/2 c. almond milk

    1 tbsp. almond butter

    1 med. red apple

    1/2 tsp. cinnamon

    1/2 oz. walnuts

    1/2 tsp. vanilla extract


Combine quinoa and almond milk in a medium saucepan. Bring to a boil. Cover and reduce heat. Simmer for 10-15 minutes, until all liquid has been absorbed. Remove from heat. Stir in almond butter, half of the diced apple pieces, vanilla, and cinnamon. Serve topped with remaining diced apple pieces and chopped walnuts.
