Delicious treat to have at gatherings or just a great snack!
1 1/4 c. almond butter
1/8 tsp. cinnamon
2 tbsp. lemon zest
2 egg white
1/4 c. honey, raw
2 tbsp. lemon juice
Preheat oven to 250°F. Line a baking sheet with parchment paper and set aside.
Measure almond butter and set aside.
Mix cinnamon and lemon zest in medium bowl. In a separate bowl, beat egg whites, then add to cinnamon mixture. Add honey and lemon juice and stir vigorously to blend. Add almond butter to the mixture and mix until well combined. Use a teaspoon to scoop small portions of batter onto parchment paper.
Bake 30 minutes. Remove from paper with spatula while slightly warm. Serve them up and enjoy! Yum!
