Originates in Jordan and Palestine. It's great when served up with sliced tomatoes and Ezekiel bread or bun. Vegetarians can add a cup of seasoned beans or some yogurt to bump up the protein.
2 tsp. extra virgin olive oil
1 tbsp. cilantro, bunch, fresh, organic
2 clove garlic
1/3 c. water
1 c. frozen baby peas
sea salt & black pepper to taste
4 egg
Heat the oil in a frying pan over medium heat. Sauté cilantro and garlic over medium heat for 3 minutes. Stir in remaining ingredients, except the eggs, and bring to a boil. Cover and cook over medium low heat for 15 minutes.
Break eggs over top, then stir. Cook for a few minutes until the eggs are done, then serve immediately.
