Delicious dressing - great for any salad!
1 c. cilantro
1/2 c. Greek yogurt
2 clove garlic
2 tbsp. lime juice
1 pinch sea salt
1/4 c. extra virgin olive oil
2 tbsp. apple cider vinegar
Combine cilantro (stems removed), Greek yogurt, garlic, lime juice, and sea salt in the bowl of a small food processor. With the motor running, add olive oil and apple cider vinegar in a slow stream until emulsified. Serve immediately, and refrigerate any unused dressing.
Makes six 2-tablespoon servings.
