Here is a recipe for a salad that will make your day. It's amazingly simple, you can have it done in less then 10 minutes and it's absolutely delicious.
1/2 c. feta cheese
1 tbsp. dijon mustard
1 tsp. honey, raw
2 avocado
1/2 c. green onion
1 garlic
2 tbsp. extra virgin olive oil
1 tsp. paprika
sea salt to taste
6 c. baby spinach
12 oz. canned white tuna
15 oz. canned kidney beans
1/2 c. yogurt
For the salad, put the spinach, tuna (drained), kidney beans (drained and rinsed), avocados, green onions (chopped), and feta cheese (crumbled) together in a big salad bowl. For the dressing, mince the garlic and put into a smaller bowl and add the olive oil. Add paprika, Dijon mustard, and sea salt. Next, add the plain yogurt and mix all of these ingredients with a fork. Last ingredient is raw honey. Now mix it all up until the dressing is smooth. Mix all of the ingredients with the dressing and you are ready to serve. Bon Appetit!
