This is a very festive looking salad! For a larger salad, double or triple each ingredient.
1 c. red bell pepper
15 1/2 oz. canned kidney beans
3/4 c. dried cranberries
1 c. walnuts
1/4 tsp. sea salt
1/2 c. red raspberry vinegar
1/4 tsp. black pepper
stevia to taste
2 tsp. worcestershire sauce
1 tbsp. dijon mustard
2 clove garlic
1 1/2 c. broccoli
1/3 c. red onion
Chop broccoli, red onion, red bell pepper, and walnuts. Toss with kidney beans (drained and rinsed) and dried cranberries.
Prepare the dressing: Whisk together raspberry vinegar, sea salt, pepper, stevia, Worcestershire sauce, Dijon mustard, and minced garlic.
Toss salad with dressing. Chill and serve.
