Chocolate Zucchini Muffins

These muffins are truly as moist and delicious as they look!


    1 c. zucchini

    2 egg

    1 c. almond butter

    4 tbsp. maple syrup

    1/2 tsp. baking soda

    1 tbsp. cacao powder

    2 tbsp. coconut flour

    1 pinch sea salt

    1 tsp. vanilla extract

    1 tsp. apple cider vinegar

    1 tbsp. chocolate chips


Preheat oven to 350ºF. Line 8 cups of a muffin pan with cupcake liners, or grease with coconut oil.

Grate zucchini, and squeeze out any excess moisture.

Mix together almond butter, eggs, maple syrup, vanilla extract, and sea salt in a medium bowl.

Add coconut flour and cacao powder; stir to mix well.

Add apple cider vinegar and baking soda; stir to combine.

Fold in grated zucchini.

Divide batter between muffin cups. Sprinkle each muffin with chocolate chips.

Bake for 20-25 minutes, until a knife or toothpick inserted in the center of one comes out clean.
