Chocolate Pecans à la V.

Chocolate treats for a Saturday night.


    1 tbsp. canned coconut milk

    1 tbsp. coconut sugar

    2 tbsp. coconut oil

    4 tbsp. cacao powder

    1 oz. pecans

    1 tsp. vanilla extract


Place a flat skillet with 1 inch of water on stove, and turn on heat. Place the 1 cup steel measuring cup with handle in the water. Handle is resting on side of skillet. Pour 1 tablespoon of coconut milk into the measuring cup. Put almost 1 tablespoon of coconut sugar in the warm coconut milk. Watch the granules dissolve while you move the measuring cup in circles. Use pot holder :-) When coconut sugar is dissolved, add 2 tablespoons of coconut oil. Add a few drops vanilla extract. Add 4 tablespoons of cacao powder and stir until smooth. Add 1 tablespoon of pecan pieces to the chocolate and stir.

When well blended, put everything into a plastic bag and push into corner. Cut off corner with scissors. Press as small or big lumps out of the plastic bag as you like. I got 14 lumps as shown in the picture. Place in fridge and wait a half an hour if you can :-)

It is a good BD principle to always have some proteins with carbs. That's why I added the pecans, but I am sure you can use any kind of nuts. The nuts and cacao powder are organic and raw. The coconut oil is organic, extra virgin, and the coconut milk is home made from organic, unsweetened, shredded coconut. This chocolate is balanced with carbs and proteins, the calorie count is high, and I was full after five chocolates.
