Chocolate Peanut Butter Fudge

This is perfect substitute for holiday treats, and seeing as the holidays will be here before we know it, I had to experiment with some candy recipes. This turned out amazing and it really is fudge, in fact if you were to serve it, don't tell them its "healthier fudge" and they'll never know!


    1 1/2 c. milk, raw or organic

    1 1/2 c. coconut sugar

    1 dsh. sea salt

    1 tsp. vanilla extract

    1/2 c. cacao powder

    3 tbsp. peanut butter, creamy


Cover a 9x9in baking pan with foil and grease with butter or coconut oil. In a heavy sauce pan, combine coconut sugar, cacao, salt, and milk. Stir constantly over medium heat until it comes to a rolling boil. Boil without stirring until it reaches the "soft ball stage." (You can check this with one of 2 methods. Using a candy thermometer, check for it to be approximately 240°F or let it boil approximately 15-20 minutes and get a cup of ice cold water, drip a little of the mixture into the water, if it forms a "soft ball" that holds its shape as it hits the bottom of the cup, it's ready.) Remove from heat, add vanilla and peanut butter, and stir until well blended. Pour into pan and let it cool completely. Cut and serve! It's delicious and very sweet. * Remember this is still candy, and should be used only as an occasional treat. ** Also, reaching the "soft ball stage" is a very crucial step, if you do not reach this step the fudge will not get firm and instead will be more like pudding. Though it will still be edible and taste good, it really wont be "fudge."
