Chocolate Chip Zucchini Bread

Only one word to describe this gluten-free zucchini bread: DELICIOUS!


    1 lrg. banana

    6 egg

    1/4 c. honey, raw

    2 tbsp. coconut oil

    1 tsp. vanilla extract

    3/4 c. coconut flour

    2 tsp. cinnamon

    1/4 tsp. nutmeg

    3/4 tsp. baking soda

    1/8 tsp. sea salt

    1 c. zucchini

    1/2 c. chocolate chips


Preheat oven to 350ºF. Grease an 8x8 baking dish, or line it with parchment paper.

Mash the banana in a large bowl. Add eggs, honey, melted coconut oil, and vanilla extract. Whisk to combine.

Add coconut flour, baking soda, cinnamon, nutmeg, and sea salt. Whisk until fully incorporated.

Stir in the shredded zucchini (make sure you press out as much of the water as possible before adding the zucchini to the batter) and most of the chocolate chips.

Pour the batter into the prepared baking dish. Use a spatula to spread it out evenly. Sprinkle the remaining chocolate chips on top.

Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.

Let cool before cutting into 12 pieces.
