Chocolate Chip Banana Oatmeal Muffins

A naturally sweet, gluten-free muffin recipe that my kids love!


    3 c. old-fashioned oats

    2 tsp. baking powder

    1 tsp. cinnamon

    1/8 tsp. nutmeg

    1/2 tsp. sea salt

    1 c. banana

    2 egg

    1 1/2 c. almond milk

    2 tbsp. chocolate chips


Preheat oven to 350ºF. Grease 12 cups of a muffin tin with coconut oil.

Combine oats, baking powder, cinnamon, nutmeg, and sea salt in a bowl.

Mash bananas (2-3, depending on their size) in another large bowl. Add eggs and almond milk; whisk together until well combined.

Add dry ingredients to wet ingredients and stir to combine.

Divide the batter among the 12 muffin cups. Top each muffin with chocolate chips.

Bake for 20-25 minutes, until a knife or toothpick inserted in the center of a muffin comes out clean.
