Chocolate Chili

Chili is such a versatile dish – there are so many combinations of spices, flavors (even raw cacao!), and vegetables you can use without sacrificing that hearty, homestyle chili flavor. Make a big batch of Chocolate Chili and freeze half of it for a quick and easy dinner at a later date.


    1 tbsp. coconut oil

    2 clove garlic

    1 med. onion

    1 lbs. ground bison

    1 tbsp. ground cumin

    1 tbsp. chili powder

    1/2 tsp. dried oregano

    1/2 tsp. ground allspice

    3 oz. tomato paste

    7 oz. tomatoes, diced, fire roasted, canned, organic

    1 c. chicken broth

    1/4 c. water

    3/4 tbsp. cacao powder


Warm up a large sauce pan over medium-high heat. Add coconut oil and minced garlic; sauté for 30 seconds. Add onion and sauté until translucent. Break apart bison and slowly add it to pan; cook for 5-10 minutes until browned.

Combine spices (cumin, chili powder, oregano, allspice) in a small bowl and sprinkle evenly on bison mixture. Mix thoroughly.

Add tomato paste, diced tomatoes, chicken broth, water (optional) and cacao powder and combine well.

Simmer for 1 hour and serve!

Note: If you choose to add water, simmer for 2 hours. If you like richer-tasting chili, skip the water and simmer for 1 hour instead.
