I adapted the Chocolate Coconut Bark recipe submitted by Marci. I have a real problem when it come to anything chocolate, ever how much I make I eat it all at once. So I came up with a recipe to make single serving at a time. Of course you can make more servings at a time if you want to. Enjoy.
1 tbsp. coconut oil
2 tbsp. almond butter
1 tbsp. cacao powder
4 tsp. shredded coconut
3 tsp. vanilla extract
1 tbsp. canned coconut milk
Melt coconut oil and stir in the Almond Butter until well mixed. Add the coconut milk, 1 Tbsp of shredded coconut, cacao power, and Vanilla Cream drops mix well. Spread mixture very thin on either wax paper or aluminum that has been placed on a plate. Sprinkle 1 tsp shredded coconut on top. Chill in freezer until firm.
Other variations: 1) Use 1 oz any kind of chopped nuts instead of nut butter. 2) Use any sweetener you choose and add 1/2 tsp vanilla. 3) Use 2 Tbsp shredded coconut only and no nut butter or nuts 4) Sprinkle any kind of chopped nuts on top 5) Use 2 T any kind of chopped dried fruit. (count 1/2 carb) sprinkle with 1 tsp shredded coconut. 6) Use 1/2 oz chopped nuts, 1 Tbsp chopped dried fruit and sprinkle with1 tsp shredded coconut. (count as 1 protein and 1/2 carb) 7) The variations are limitless.
