Chocolate Banana Protein Pops

Yummy protein-packed treat!

Ingredients

    1 tbsp. almond butter

    shredded coconut to taste

    3 med. banana

    3 scp. Spring of Life Plant-Based Protein Powder, chocolate

    3/4 c. coconut oil

Directions

Prep bananas: slice in half and insert a popsicle stick into each banana piece. Lay banana pieces on a parchment-covered baking sheet and place in the freezer for at least an hour or overnight. You want them to be cold enough to harden the coconut oil quickly.

Whisk together protein powder and melted coconut oil.

Remove banana pops from the freezer and dip each one in the chocolate coconut oil mixture, letting the excess drip off. Hold each pop until the chocolate begins to freeze; then place it back on the parchment-lined baking sheet. Repeat until all banana pops are coated. Then double dip them so you get a thicker chocolate coating.

Drizzle almond butter on each pop and top with shredded coconut. Move chocolate-coated banana pops back to the freezer for at least an hour or two to firm up (overnight is best for fully frozen pops though). Serve frozen.
