My first attempt to make a treat (something between a truffle and bark candy) that satisfies my chocolate cravings.
1/4 c. cacao nibs
2 oz. cocoa butter
1/4 oz. chocolate
1 tsp. butter
1 1/2 tsp. coconut sugar
1 dsh. vanilla extract
3 tbsp. almond butter
2 tbsp. canned coconut milk
Melt the cacao nibs, butter, coconut sugar and vanilla over low heat, stirring to avoid burning. The nibs may not melt completely, but that's okay - they add texture, like chocolate chips. Take off stove, set aside. Mix in almond butter and coconut milk (or almond milk). Refrigerate or freeze for 30 minutes to 1 hour. Break into pieces to serve. Store in refrigerator (to avoid melting).
