Low Carb, Chive, Red onion and Cheese mini muffins, so I call them puffs.
1/2 c. almond meal
1/4 c. sunflower seeds
1/4 c. sun-dried tomatoes
1/4 c. fresh chives
1/2 c. ground flax seeds
1/3 tsp. sea salt
1 tsp. baking soda
2 oz. goat cheese
1/4 c. water
1 tbsp. extra virgin olive oil
2 oz. parmesan cheese
3 lrg. egg
-Preheat Oven to 350F - Mix all dry ingredients in a bowl, apart from parmesan. Then add sun-dried tomatoes and chives - In a blender or separate bowl (use electric mixer) mix all wet ingredients - Add wet with dry and mix all thoroughly - Spoon or pour into mini non-stick muffin pan (if needed ligthly greased) - Sprinkle parmesan on top - Bake for 15-20min - Get about 20-22 mini puffs out in my pan. They bake within 15min - When I make the medium size ones about 8 they need 20min to bake
