Chile Caramelized Shrimp

This recipe is a favorite! It's delicious and a breeze to fix (and only uses one pan!).


    6 oz. noodles, rice, stick or vermicelli, organic

    1 lbs. broccoli

    1 green onion

    sea salt & black pepper to taste

    3 tbsp. coconut sugar

    1 tbsp. water

    1 tbsp. extra virgin olive oil

    3 clove garlic

    1/4 tsp. red pepper flakes

    1 lbs. shrimp

    1/4 c. cilantro, bunch, fresh, organic


In a heavy skillet, heat 1 inch of water to boiling on high. Add noodles and cook for 1-2 minutes or until just tender. Be careful not to overcook. With tongs, transfer noodles to colander. Rinse under cold water and drain. Set aside.

When water in skillet returns to boiling, add broccoli florets. Cook for 3 minutes or until tender-crisp; drain and transfer to a large bowl. Toss broccoli with finely chopped green onion and 1/4 teaspoon of sea salt. Wipe skillet dry.

In the same skillet, cook coconut sugar (or your favorite sweetener) and water on medium-high (stirring just until sugar dissolves) 3 to 4 minutes. Stir in olive oil, thinly sliced garlic, and crushed red pepper. Cook for about 10 seconds, then stir in peeled and deveined shrimp.

Cook 2 to 3 minutes or until shrimp just turns pink. Return noodles to pan and toss gently. I serve the broccoli on the side; but it can easily be tossed in with noodles and shrimp.
