Absolutely delicious! Incredibly quick and easy to prepare.
1 tbsp. coconut oil
2 clove garlic
1 lbs. ground chicken
1 med. red bell pepper
2 chicken sausage
4 white mushrooms
1/2 tsp. oregano, ground, organic
1/4 tsp. sea salt
2 c. tomato sauce
8 oz. brown rice penne pasta
1/2 tsp. dried basil
Heat coconut oil in a large skillet or pot over medium heat. Add minced garlic and saute until fragrant. Add the ground chicken and cook until lightly browned, about 8 minutes. Add the red peppers (chopped), mushrooms (sliced and cut in half), basil, oregano, and salt. Stir for two minutes. Add sausage (sliced thin), and pour in tomato sauce. Simmer on low until sauce is heated through, about 15 minutes.
Cook the pasta in boiling salted water for approximately 15 minutes. Do not overcook or it will be sticky! Drain noodles and rinse with cold water. Add pasta to meat sauce and stir to coat the pasta. Bon Appétit!
