Chicken with Cream of Mushroom Sauce

Creamy mushroom sauce over chicken.


    1 lbs. chicken breast

    1 med. onion

    1 c. white mushrooms

    1 c. chicken stock

    1 c. canned coconut milk

    1 tbsp. coconut oil

    sea salt & black pepper to taste


Preheat oven to 350°F.

Place chicken in casserole dish, season with salt and pepper (to taste), and bake for 40 minutes.

In the meantime, heat coconut oil over medium-low heat in a large skillet. Saute chopped onions until translucent. Add thinly sliced mushrooms, and cook until tender. Pour in chicken broth, and cook 5 minutes. Stir in coconut milk, and simmer 5 more minutes.

Pour over chicken when it is done and enjoy!
