Chicken Wings

Chicken wings on the skinny:) 12-14 wings

Ingredients

    1/4 c. butter

    1 dsh. black pepper

    1 dsh. garlic powder

    1/2 c. brown rice flour

    1/4 tsp. paprika

    1/4 tsp. cayenne pepper

    1/4 tsp. sea salt

    1/4 c. water

    1 coconut oil

Directions

Preheat oven to 190C, 375F (For fan assisted ovens, 165C, 298F) A.Position the oven rack at mid-range level. Wash chicken wings with cold water. Place on a cookie sheet, set aside and allow to drain. Line a separate cookie sheet with aluminum or baking paper.

B.Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving. (If making hot sauce from scratch, you may decide to skip this step until refrigerating in section C.)

C.In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and generously rub flour mixture on them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.

D. Cup one hand and fill it with olive oil then drizzle the oil across the chicken wings so that it is distributed evenly. Pick up a wing and rub the oil and seasoning around the meat to coat the wing with a somewhat even amount of oil. Repeat this step so that all the chicken wings in the bowl are well coated. This will only take a few minutes. You will be able to feel the seasoning and oil mixture and the idea is to try to coat it all about the same.

E. On cookie sheet, place wings with a little space between them.They may touch but best not to be piled on each other. Cook for 50-60mins (40-50mins in fan assisted oven). Check after 45mins (35mins Fan assisted) to check for crispiness. You do not want the chicken overcooked.

F.Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together.
