This is one of my family's favorite meals! A wonderful combination of salty and sweet.
1/2 lbs. chicken thigh, skinless
2 lrg. red apple
1 tsp. dried sage
1/4 tsp. cinnamon
1/8 tsp. nutmeg
4 clove garlic
1/2 tsp. sea salt
black pepper to taste
Preheat oven to 475°F.
Combine chopped apples, sage, cinnamon, nutmeg, chopped garlic, and 1/4 teaspoon sea salt. Toss well to coat. Spread apple mixture on a jelly roll pan coated with coconut oil.
Season chicken with remaining 1/4 teaspoon sea salt and a little pepper. Arrange on top of the apple mixture. Bake for 25 minutes, until chicken is done and apple is tender. Remove chicken from pan; keep warm. Partially mash apple mixture with a potato masher, and serve under the chicken.
