This recipe can be eaten in a tortilla, over a bed of lettuce, or as is.
1/4 c. green onion
1/4 c. cilantro
2 tbsp. taco seasoning
1 lbs. chicken breast, skin-on
30 oz. canned black beans
1 med. onion
2 clove garlic
1 tbsp. coconut oil
1/2 c. mild cheddar cheese
1 jalapeno pepper
1/2 c. tomato
Melt coconut oil in large frying pan. Chop onion and garlic, and saute in coconut oil. Once onions and garlic are translucent, add beans (drained), chopped chicken, taco seasoning, and diced jalapeno. Mix together and cook for about 4 minutes. Turn heat off and top with cheese. Place under the broiler until cheese is melted. Once cheese is melted top with diced tomato, diced green onions, and finely chopped cilantro. Serve hot.
