Throw these delicious ingredients together for a great dinner!
1/3 c. white quinoa
2/3 c. water
3 c. baby spinach
2 c. cooked chicken
1/4 c. basil pesto
2 tbsp. parmesan cheese
Combine quinoa and water in a small saucepan, and bring to a boil. Reduce heat, and let simmer for about 10 minutes, until water is absorbed and quinoa is fluffy.
Heat a pan over medium heat. Add quinoa, torn spinach, cooked chicken, and pesto. Stir to mix well. Cook until the spinach is wilted and chicken is heated through.
Serve warm with Parmesan cheese sprinkled on top.
